Baked Falafel, Yum!
When I first switched to eating a Plant-Based diet with my husband a little over 3 years ago, one of my discoveries was Falafel. It became an instant favorite.
However, the falafel you get at restaurants is deep fried and pretty greasy. Not really all that healthy! I discovered this recipe for baked falafel at the Ultimate Daniel Fast website. I made a few adjustments, but it was so amazingly good, I just had to share it with you. I also attempted to make homemade whole-grain tortillas from the same site as well. I don’t think I did a great job of it, but they still tasted really good! I’m sure with practice, I will get much better at it.
I added garlic and parsley to the Tahini-Lemon Sauce on the recommendation of a comment made by someone who knows Lebanese food.
For the toppings in the wrap I used: roasted red pepper hummus, guacamole, lettuce, pico de gallo, pickles, red pepper slices and the Tahini-Lemon Sauce. It was amazing!
The next time I make it, I plan on removing the olive oil in order to make it fat-free. I’ll let you know what I substitute for it, I’m thinking maybe vegetable broth, and how it turns out.
